Chessy Hash Brown
I’m excited to share one of my favorite recipes with you, a super simple twist on a classic favorite: Cheese hash browns.
I love making homemade Hash Browns that are not only tasty but also fun to look at, especially when you shape them into hearts.

Ingredients
- 3 potatoes
- 2-3 tablespoons olive oil
- 1 ½ tablespoons flour
- Salt, pepper, and paprika to taste
- 2.5 ounces of red cheese, grated
If you don’t have red cheese, you can make it with:
- 2.5 ounces of grated cheese (such as mozzarella or white cheddar)
- 2-3 drops of red food coloring (gel or liquid)
- 1 teaspoon of milk or water (optional, for even coloring)

Step-by-Step Recipe
- To make red cheese, mix a few drops of red food coloring in a small bowl with one teaspoon of milk or water and add the grated cheese. Toss it gently with a spoon or your hands until the cheese is evenly coated.
- Peel the potatoes with a vegetable peeler and grate them on a fine grater.
- Sprinkle salt over the grated potatoes, then squeeze out the extra liquid using a paper towel. Add a pinch of paprika, pepper, and 1 ½ tablespoons of flour.

- Place a heart-shaped cookie cutter on your board and spoon about three tablespoons of the potato mixture into it. Press down gently with a teaspoon.
- Carefully remove the mold and repeat with the rest of the mixture. This is what makes these hash browns so special!
- Heat the olive oil in a skillet. Place the hash browns in it and cook for 2-3 minutes until they turn nicely browned. Flip them carefully to get an even crisp on both sides.

- Place the grated cheese on top of the hash browns. For the best melt, you can cover the skillet with a lid for an extra minute if needed.

- Garnish with some parsley and little cheese hearts.
