  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 2 teaspoons dry yeast
  • 1 tablespoon sugar
  • 1 1/4 cups warm water (about 110°F)
  • 1/4 cup olive oil

For Topping:

  • 2 tablespoons fresh rosemary, chopped
  • Coarse sea salt, for sprinkling
  • Extra olive oil, for drizzling
  • Cherry tomatoes, onions, and edible flowers (for decoration)

How to Make Focaccia

1. Make the Dough

  • In a large bowl, mix the flour and salt.
  • In a separate small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until foamy.
  • Pour the yeast mixture and 1/4 cup of olive oil into the flour mixture. Stir until a dough forms.

2. Knead the Dough

  • Turn the dough onto a floured surface and knead for about 10 minutes, until smooth and elastic.
  • Place the dough in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour, or until doubled in size.

3. Shape and Second Rise

  • Punch down the dough and place it on a greased baking sheet.
  • Gently stretch it out to fit the pan.
  • Cover again with a damp cloth and let it rise for 20 more minutes.

4. Preheat and Add Toppings

  • Preheat your oven to 400°F (200°C).
  • Use your fingers to dimple the dough (this helps it absorb the olive oil and creates that classic focaccia texture!).
  • Drizzle with olive oil and sprinkle with rosemary and coarse sea salt.
  • Decorate with tomatoes, onions, and edible flowers.

5. Bake to Perfection

  • Bake for 20-25 minutes, or until golden brown on top.
  • Let it cool slightly before slicing and enjoying!

Tips for the Best Homemade Focaccia

  • Use good olive oil! It makes a big difference in flavor.
  • Don’t skip the second rise. It helps the bread get nice and fluffy.
  • Sprinkle parmesan or mozzarella before baking for extra flavor.
  • Decorate with any ingredients you like. Try roasted garlic, sun-dried tomatoes, olives, or caramelized onions!
  • To store: Keep in an airtight container at room temp for up to 2 days.
  • To freeze: Wrap in plastic and freeze for up to a month.
