I love a good quesadilla, don’t you? 

There’s something so comforting about warm, melty cheese wrapped in a crispy tortilla.

But what if I told you that you could make a quesadilla without a tortilla? Yep! 

This Beef Quesadilla recipe uses an egg wrap instead, making it super tasty and high-protein. A healthier option, too!

It’s easy, quick, and perfect for breakfast, lunch, or even a snack.

Ingredients

  • 2 eggs
  • 1/2 tbsp. olive oil
  • 1/3 cup baked and diced beef
  • 1/2 tomato, sliced
  • 1/2 cucumber, sliced
  • 2 slices of cheese
  • 1 tbsp. tomato sauce
  • 1 tbsp. sour cream
  • Some green chili and herbs
  • Salt and pepper to taste

How to Make a Quesadilla with an Egg Wrap

  1. Crack the eggs into a bowl and beat them with a little salt and pepper.

  1. Heat a pan, add the olive oil, and pour in the egg mixture. 
  1. Cook it like a crepe until it sets (about 2 minutes). Flip it over and cook for another 30 seconds.
  1. Cut the egg wrap from the center to the edge.

  1. Fill in your quesadilla. Imagine the egg wrap divided into four sections:
    • Section 1: Spread sour cream and tomato sauce.
    • Section 2: Place the cheese slices.
    • Section 3: Add fresh herbs, cucumber, and tomato slices.
    • Section 4: Add diced beef.

  1. Fold the sauce section over the cheese section. Keep folding over the veggies and beef sections.

  1. Heat a pan and grill the folded quesadilla for a minute on each side until lightly crispy. 
  1. Sprinkle some fresh herbs and green chili on top. Serve warm with extra veggies or your favorite dip.

Fun Ways to Customize Your Quesadilla

  • Go vegetarian: Swap the beef for mushrooms or black beans.
  • Boost the protein: Add chicken, turkey, ham, or even shrimp.
  • Spice it up: Throw in some jalapeños or a drizzle of hot sauce.
  • Switch up the cheese: Try mozzarella, cheddar, or even pepper jack.
