Greek Lemon Potatoes

Ingredients

- 5 baby potatoes
- 1 lemon
- 3 tablespoons olive oil
- 1 red pepper
- 3 ounces feta cheese (crumbled)
- 1 teaspoon dried Italian herbs
- 3 sprigs fresh thyme
- 1/2 teaspoon coriander
- 1/4 teaspoon black pepper
- Salt to taste
- 1/2 bunch dill
- 1/2 bunch parsley
How to Make Authentic Greek Lemon Potatoes
- Preheat your oven to 356°F (180°C).
- Dice the potatoes. Try to keep the pieces the same size for even cooking.

- In a bowl, mix the potatoes with olive oil, the juice of half a lemon, and a little salt (remember, feta is salty!). Let them sit for a few minutes so they soak up the flavors.

- Dice the red pepper. Keep the pieces the same as the potatoes.

- Line a baking tray with foil and spread out the potatoes and bell peppers in a single layer. Bake for 20 minutes, removing in between.

- Stir in the spices and half of the feta cheese. Bake for another 20 minutes or until the potatoes are soft inside.

- Place the potatoes on a serving plate and sprinkle with the remaining feta cheese, chopped dill, and parsley. Serve hot and enjoy!
