Avocado Chickpea Toast

- 2 large ripe avocados
- 1 (15 oz.) can chickpeas, rinsed and drained
- 1 medium lemon
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- ¼ cup parsley, chopped (plus extra for garnish)
- 6 large slices whole-grain bread, toasted
- ½ cup Greek yogurt (or coconut yogurt for a vegan option)
How to Make Avocado Chickpea Toast
- Cut your avocados in half, remove the seeds, and scoop the flesh into a bowl. Add the chickpeas and mash everything together with a fork. It’s okay to leave some chunks for texture.

- Roll the lemon on the counter, then cut it in half and squeeze the juice over the avocado-chickpea mixture. Add garlic powder, salt, and pepper. Stir in the chopped parsley.
