Have you ever tried Greek lemon potatoes? 

They are crispy on the outside, soft on the inside!

They’re one of my favorite Mediterranean recipes for potatoes, and once you try them, I bet they’ll become one of yours too!

What makes them special? 

The secret is in the lemon, olive oil, and herbs. They soak into the potatoes as they bake, giving them a delicious flavor.

You probably have most of the ingredients in your kitchen already, so let’s dive into this easy Greek potatoes recipe!

Ingredients

  • 5 baby potatoes
  • 1 lemon
  • 3 tablespoons olive oil
  • 1 red pepper
  • 3 ounces feta cheese (crumbled)
  • 1 teaspoon dried Italian herbs
  • 3 sprigs fresh thyme
  • 1/2 teaspoon coriander
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1/2 bunch dill
  • 1/2 bunch parsley

How to Make Authentic Greek Lemon Potatoes

  1. Preheat your oven to 356°F (180°C).
  1. Dice the potatoes. Try to keep the pieces the same size for even cooking.

  1. In a bowl, mix the potatoes with olive oil, the juice of half a lemon, and a little salt (remember, feta is salty!). Let them sit for a few minutes so they soak up the flavors.

  1. Dice the red pepper. Keep the pieces the same as the potatoes.

  1. Line a baking tray with foil and spread out the potatoes and bell peppers in a single layer. Bake for 20 minutes, removing in between.

  1. Stir in the spices and half of the feta cheese. Bake for another 20 minutes or until the potatoes are soft inside.

  1. Place the potatoes on a serving plate and sprinkle with the remaining feta cheese, chopped dill, and parsley. Serve hot and enjoy!
