Ingredients

  • 4 large eggs
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract 
  • ¼ teaspoon salt 
  • 8 slices sourdough bread (or any sturdy bread of choice)
  • 1 cup shredded coconut
  • 1 tablespoon coconut oil 
  • 4 teaspoons butter, for serving
  • 4 tablespoons maple syrup, for serving 
  • 1 cup blueberries, for serving
  • 1 sliced banana, for serving
  • 4 slices of orange, for serving

How to Make Coconut French Toast

  1. Preheat your oven to 200°F (95°C) to keep the cooked toast warm.
  1. In a shallow dish, whisk together the eggs, coconut milk, vanilla, and salt. In another shallow dish, add the shredded coconut.

  1. Dip each slice of bread into the egg mixture, making sure both sides are covered.

  1. Transfer to the shredded coconut and press lightly so it sticks.

  1. Heat a large non-stick skillet over medium heat and add coconut oil.
  1. Place the coated bread in the hot skillet and cook for 4-5 minutes per side, until golden brown.
